You do nothing.
Let us explain: First, you have already changed your password in Gmail, through the Gmail web interface (you have, right? If not, you need to, as that’s the key to the whole thing).
Now, the next time your Android device checks email through Gmail, when it gives Gmail the old password, that old password won’t work. So Android will prompt you to put in the new password:
